ITHACA, NY – While The Rook is certainly a hub for smart cocktails and small plates, don’t forget to save room for dessert.
Ithaca Voice Dining visited the kitchen with Chef Gentry Morris for a backstage look at how The Rook prepares its ice box trifle.
The trifle, a decidedly modern riff on a large format British dessert usually layered with fruit and cake, is a delightful single-serving pot of gluten free goodness.
Chocolate brownie cookies form the base, alternating with layers of frozen caramel pastry cream, and a generous dollop of vanilla whipped cream and almonds on top.
