ITHACA, N.Y. — With the acquisition of a brand new pasta maker from Italy, all of the pasta at ZaZa’s Cucina is now homemade.
Ithaca Voice Dining visited ZaZa’s to watch owner and former executive chef Curtis Radcliffe make gnocchi from scratch.
Rolling out the dough into a rectangle shape before, Radcliffe carefully added just enough flour for the gnocchi to remain pillowy with each bite, but not chewy.
The finished product ended up being gnocchi Bolognese, the sauce comprising tomatoes, herbs and a blend of beef, pork, and veal.
On the current menu, diners can sample the gnocchi accompanied by short ribs, roasted root vegetables and a Burgundy demi-glace, or in a quattro formaggi (four cheese) sauce with brie, fontina, mascarpone, and gorgonzola.
