Callebaut chocolate adds a surprising smoky-sweet layer to Luna Inspired Street Food’s award-winning chili.
Luna’s short rib, pork shoulder, black bean, and chocolate-dipped pork belly chili won the People’s Choice award at the 18th Annual Great Downtown Ithaca Chili Cook-Off.
Chef Consultant Bryan Keller showed Ithaca Voice Dining how to make his chili from scratch.
Keller simmers his chili for four to five hours, adding gluten-free chicken broth, tomatoes, onions, garlic, roasted jalapenos and spices. He tops it off with lime cream, scallions, and shredded cheese.
